Espresso Chocolate Cake
If you love coffee as much as I do, you are going to go nuts for this cake! It is delicious decadent chocolate cake infused with coffee. YUM!
Ingredients
1 cup buttermilk
1/2 cup vegetable oil
2 extra large eggs
1 tsp vanilla
1 3/4 cup flour
2 cups sugar
3/4 cup cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup freshly brewed hot coffee
Directions
Mix buttermilk, oil, eggs and vanilla until smooth.
In a separate bowl mix together all dry ingredients.
Slowly add dry mix into wet mixture.
Add in coffee, until just combined.
Bake at 350F for 35min. Recipe is good for 2x 8" pans, or 1x 10" pan, or 2 dozen cupcakes filled 3/4 of the way.
